Can I hide all the events in the flows feature in Mixpanel and then select the relevant events I want to streamline it to

You cannot hide all events by default in the Flows feature and then selectively add only the relevant events. However, Mixpanel does allow you to hide specific events from the Flows report to simplify and clarify your results. You can do this by clicking the Hide Events button at the top of the chart and checking any events you want to hide, or by right-clicking on a specific event in the Flows chart and selecting to hide it. This helps reduce noise from irrelevant events, but it is a manual process—you start with the default set of events and then hide the ones you don't want to see, rather than starting with none and adding only the ones you want to include.There is no mention in the knowledge sources of a feature that allows you to start with all events hidden and then selectively add only the relevant ones to the Flows report.
