why can't I edit a sub-board if I can edit the main board?

You can't edit a sub-board (nested board) just because you can edit the main (parent) board, because permissions in Mixpanel Boards are set at the individual board level and do not cascade from parent to child. Nesting a board under another does not change or override the permissions of the sub-board. You must have explicit edit access to each board you want to modify, regardless of its position in the hierarchy.
