B2B Data Storage: Challenges in EU vs. US for User Data Compliance

Hi I have an B2B SMB business app from India where we are collecting user data & their events data to identify their pattern & usage , we collect basic consent from them but while implementation we need to understand where should be store data in EU or US , what are the different challenges users can face ?
