I was wondering exactly what this is representing? What dies ‘unselected values’ actually mean?

From what I can tell in your screenshot, the unselected portion is the value that was clicked “off” in the report legend on the right hand side.
Similarly, if you see “other” in the pie graph, that refers to the aggregated collection of data that is not represented in the legend.
