Hi,
How can I completely uninstall the unity package from a project. A tried to delete everything related to mixpanel but when I try to start the project again, Unity gets stuck on Script Compile.

I think the best way to track down the leftover code would be to follow the install steps and search for anything that might have been leftover. https://developer.mixpanel.com/docs/unity#installing-the-library
It could also be worth a check to make sure that your version is most up to date as well.
